Tax Tease - Irish Whiskey Cocktail

Whiskey is no stranger to tax levies. The Whiskey Rebellion in the late 18th century required federal military to quell the uprising in Pennsylvania. In Ireland, a less violent protest against English taxes on malted whiskey spawned the quintessential style of single pot still Irish Whiskey. The most famous uprising against a liquid drink was The Boston Tea Party, a revolt by Boston patriots against English taxation. Boston's Irish culture and shared history against unfair taxes in both the US and Ireland are the genesis for our Irish Whiskey Cocktail, Tax Tease.
The original version of this cocktail called for "smoking" the drink in a smoker box. Our interpretation utilizes an Irish Whiskey with a subtle peat influence to achieve the smoky characteristic. We recommend Boston Bakers Irish Whiskey, peated 3 cask blend, to provide the final link between Boston and Ireland and their shared "taking the piss", scoffing or Tease, given the cocktail's ingredients, against drink taxation.
**If you don't have Boston Bakers available, use an Irish Whiskey with a single pot still component in honor of its origin due to tax avoidance
- 2 oz Irish Whiskey
- 1/4 oz Honey syrup
- Lemon wedge
- Tea
INSTRUCTIONS
- Combine whiskey and syrup in a shaker with ice

Stir vigorously for 20 seconds
- Strain and pour into glass with ice
- Top off with tea
- Garnish with lemon wedge
