Good Cork - Irish Whiskey Cocktail

Ireland and Mexico both have rich cultures with holidays that are celebrated in the United States, Saint Patrick's Day and Cinco de Mayo. The Good Cork Cocktail combines elements of both cultures. The cocktail is interesting for its use of the single pot still style of Irish Whiskey and Mezcal, the other Mexican agave spirit. The cocktail was originated in New York in 2013 by bartender Phil Ward.
This is a spirit forward cocktail. The spice character from un-malted barley with smokiness from roasting the agave makes for a tantalizing union. There are countless combinations to be explored given the variety of single pot still whiskeys (Redbreast vs. Powers for example) and Mezcal (light vs. heavy smokiness). Try your favorite of each to arrive at your preferred combination. Our recommended versions combine the apple fruit and spice elements of the single pot still whiskey with the smoky and apple fruit notes of the mezcal brand.
Version 1:
To accentuate green apple notes,
use Green Spot Single Pot Still with Illegal Mezcal Joven
Uses a 40% abv whiskey given spirit forward cocktail (Mezcal/Benedictine)
Version 2:
To accentuate red apple notes,
use Green Spot Quails' Gate Single Pot Still with The Lost Explorer Mezcal Espadin.
Higher abv whiskey for those accustomed to spirit forward drinks (e.g. Manhattan)
- 1 oz Single Pot Still Irish Whiskey
- 1 oz Mezcal
- 1/2 oz Benedictine
- 2 dashes Peychaud's bitters
INSTRUCTIONS
- Combine ingredients in shaker with ice

Stir vigorously for 20 seconds
- Strain and pour into glass with fresh ice
- Garnish with apple slice
